Hawthorn Berries Recipe – The hedgerows here are full of hawthorns, those bright red berries. What’s better than making homemade hawthorn berry ketchup with such a bounty. It’s like an all natural version of that great British classic HP sauce!

Autumn’s bounty just screams to be preserved and what better than to make natural versions of store-bought classics. It’s like homemade hawthorn ketchup HP sauce. My own take on the original classic. Just perfect on a bacon roll.

It brought a day of perfect autumn sunshine last week Sunday. It was such a change from the wet and windy weather we’ve been having that I was out of the house like a shot grabbing my camera and wandering the streets.

Autumn golds were everywhere, but what kept catching my eye were the boisterous red hawthorn berries like little rubies glistening in the sun.

Hawthorn is actually part of the rose family, as are the rose bushes found on the wild dog rose. You can use anything from leaves to spring flowers and of course hawthorn berries, or hawthorn as they are often called.

Haze isn’t the type of berry you can graze on while walking down the lanes. You’ll instead strain their stone-hard interior and bitter taste. However collect these little gems and take them home for cooking and you have a treat in store.

Needless to say I left the house unarmed with any sort of bag to collect. I couldn’t pass up this opportunity to make the most of the bounty I used on the front pouch pocket of my least glamorous sweatshirt.

I broke and picked my way along the lanes and headed home with an outline not unlike that of a mother kangaroo.

Upon emptying my pouch I discovered I had 500 grams of hawthorn berry goodness. Now what could I do with them?

I immediately thought of chutney but dismissed it as I had eaten all the dry fruits the other day and hadn’t changed it yet. How about making an almost chutney and having it as hawthorn ketchup instead?

A spicy sauce, something deep and fruity and rich – really like HP sauce. For non-UK residents, HP sauce is a spicy and fruity brown sauce, basically like chutney ketchup.

I was determined there and then to try making my own version of HP sauce using hawthorn berries as my base. Come on, doesn’t everyone do that on Sunday afternoons?

It was just a matter of boiling 300ml of cider vinegar and the same amount of water with my hose until they were soft, this took me about 35 minutes.

Then I pressed them through my trusty old muoli grinder (a sieve and wooden spoon will do the trick but I like to play with my old kitchen toys now and then) and returned the pulp to the pan.

Then add 175 grams of light brown sugar and the following spices; 1/2 teaspoon each salt, ginger and ground nutmeg.

I brought it to a slow boil and first let the sugar dissolve completely and then simmered for about 5 minutes.

This is a 350ml jar of Hawthorn Berry Ketchup. Made enough for a bottle of but boy was it worth it.

Your hawthorn berry ketchup will keep for about 6 months in a cool cupboard. Store once opened in the refrigerator and use within one month.

This ketchup is perfect on a bacon roll or with a burger. Anywhere you would use a spicy brown sauce like HP sauce.

Here I used it on a piece of toasted French bread with corned beef and some salad. It will take the humbleness of cold meat to new levels of deliciousness.

Ketchup will keep in a cool, dark place for up to 6 months. Store once opened in the refrigerator and use within one month.

So, I’ve done some research and put together a rundown of different hawthorn berry recipes I’ve found online – I’m going to try to pick some berries and try them out! There are so many different recipes and ideas for what you can do with this versatile little berry (hawthorn berries are high in pectin, good news for jam makers!), I’m surprised it never made it to me before. It’s a great way to turn a cheap £10 bottle of supermarket vodka into a bottle of fancy Hawthorne gin that you’ll pay at least £25 for. Because yes: Gin is basically just vodka that has been flavored during or after the distillation process – so Hawthorn Gin and Hawthorn Vodka are more or less the same thing!

Here’s my recipe for homemade hawthorn berry gin – the recipe that got me interested in using foraged hawthorn berries in the first place. This Hawthorn gin recipe is very easy and straightforward to make, and the flavor is delicious – like a fragrant sherry, but with a nice boozy hit. Of course, once you’ve made a bottle of hawthorn berry gin, it will keep for quite a while, and there are lots of different things you can do with it – for example, a hawthorn gin fizz, or a hawthorn gin and tonic. !

I also found this recipe for spiced hawthorn and rose mead, which sounds amazing but is definitely more advanced than that – if you’ve made wine before, this might be right up your alley!

Hawthorn Berry Ketchup is a hawthorn berry recipe that I really want to try with this year’s harvest of hawthorn berries! I found this recipe by Monica Shaw on the Great British Chefs site, and it sounds delicious – she describes it as “a nice sweet and sour sauce, with a little spicy kick thanks to lots of black pepper”. and suggests that hawthorn berry ketchup would work well with rich meats like venison and pork belly. The Hawthorn Ketchup recipe is actually more straightforward than I expected and only requires a few ingredients – double winner!

Another way to use your hawthorn berries is to make a tea or herbal infusion. The recipe itself is very simple: take one tablespoon of hawthorn berries for every cup of tea, add boiling water, and let the hawthorn berries dissolve for 5 – 10 minutes. You can serve hawthorn berry tea hot, or serve it chilled over ice.
