How Deep Are Hawthorn Roots And Do They Spread?
But before you get caught spending the better part of the rest of the week claiming your reward, here are some quick tricks to help you quickly tackle your harvest and make tantalizing and tasty healing foods and remedies perfect for the season.
First, set aside at least half of the berries and all of the leaves on wide, flat trays to dry. Wash them by running them through a colander of cold water and shaking them well before placing them on the racks to dry.
Cookie trays with cooling pads installed in them to lift leaves and berries off the surface of the pan work great. No shelving? Simply spread parchment paper on baking sheets before laying out the leaves and berries to dry. If you are using an oven, use it only after you have turned it off and the oven temperature is 90°F or less. Otherwise, the leaves will quickly turn into burnt dust. You can also separate the berries and leaves and dry the berries at 130°F to 150°F and store the leaves at lower temperatures. Store them in sealed paper bags until you use them to make tea or other recipes to avoid moisture sealing which can lead to spoilage or mold.
This will give you long lasting berries for later use, as well as the first two ingredients of hawthorn tea. Berries won’t stay fresh, so dry any that aren’t ready to eat right away.

Then wash, sort and remove the stalks of the rest of the berries. You can use the recipes on this page to make tincture, syrup, and a lovely savory berry ketchup. Now you can measure your berries and choose recipes and decide how many of them you want to cook. I usually make all three recipes in one day to get the most out of my berry work in one go.
First decide how much syrup you want to make. Boiling syrup requires about twenty times the weight of your berries, so if you plan on making a liter or more of syrup, you’ll need at least a 10-liter water pot.
Hawthorn syrup is a well-known herbal remedy for coughs, colds, flu symptoms, headaches, and heart strengthening.
Select berries and weigh them so you know how much water to add to the pot. For simplicity, let’s say that we use 100 grams of berries or 3.5 ounces, because it makes measuring water easier. I would suggest using multiples of 100 grams for your recipe. This will mean 3.5, 7, 10.5 and 14 ounces as the recipe increases. But remember, you need 20 times as much water, so unless you have a very large simmering pot, you will work with smaller values.

Hawthorn is a deciduous thorny tree belonging to the rose family (Rosaceae). The genus Crataegus includes 280 species, but C. laevigata and C. monogyna are most often used in phytomedicine. Hawthorn berry seeds contain slightly toxic compounds and should not be eaten. If you want to use the pulp left over from the tea, strain the seeds first.
