Even though it’s been a busy few weeks, we’ve still managed a few trips after work. One such excursion was inspired by artisan Ray Mears … hawthorn fruit leather.

How Long Can Hawthorn Berries Last
Hawthorn is a delicious little berry with tons of natural pectin. As a result, if you crush berries like mushrooms, they will harden like jello within an hour. This unique characteristic has led some to conclude that this fruit can be very useful in making the first jelly and jam.
Health Benefits Of Hawthorn Berries
Many people love strawberry rhubarb cake, but are surprised to learn that parts of the rhubarb plant are poisonous. The same goes for the hawthorn where the berries are delicious, but the cyanide holes are deadly! So like all foods, we learn how to prepare and consume them to achieve their greatest potential.
Finally, the fruit is squeezed and mixed with peaches to eat (the berries are a little dry this year and need a little water or juice). Care was taken to remove all the poisonous holes in the mixture. Keep in mind that this process takes about an hour, so be patient when you try it.
After a few hours in the sun all the moisture was gone and although the fruit skin wasn’t very tasty it sure wasn’t half bad!
An added bonus according to Ray Mears is that this fruit skin can be stored for over a year! When it comes to takeaway food, such shelf life is a big plus. Planting in autumn or spring is best for hawthorn, but, for all trees, the best season is autumn.

They are sweet and tender if you get them at the right time, and last year I tried them too early in the fall. This year, the Washington hawthorn was sweet and tender in late October. But at this time the single-seeded hawthorn began to rot, so next year I will look for them in mid-October.
I vouch for Josh Fecteau’s recent post, which inspired me to try hawthorn berries again. As Josh pointed out, there are many species of hawthorn, perhaps 50 in New England. And, in all of North America, there may be a thousand species, according to George Symonds (from his wonderful book Tree Identification Book: A New Approach to Practical Tree Identification and Recognition.
, my favorite guide to studying ID trees). Fortunately, you don’t need to know any specific species. You just need to know it’s hawthorn, because all hawthorns have edible berries. However, like apple seeds, hawthorn seeds contain cyanide and should not be eaten. Take it easy; the seeds are just saliva.
Why bother hawthorns? They are beautiful, interesting and delicious foods with known health benefits. Some people use the berries to make hawthorn jelly, but I have never tried it. It grows as a small tree or large shrub, and bears white flowers in late spring. The fruits turn red in September (here), but then they are sweet. On October 31, they are sweet, and the tops may be a little off. Each seed has 3-5 seeds.
The leaves are lobed and toothed, as you can see in the picture above. Many other species of hawthorn have similar leaves. The tree is armed with long thorns, reaching about 3 centimeters in length. However, with proper care, you can easily harvest the berries, which hang from the branches. It is easier in the season after many leaves have fallen and the thorns are no longer hidden.

Also known as common hawthorn, a European native that escaped cultivation and naturalized in North America. It’s sometimes called an invasive plant, but I don’t see it often, and when I do, it’s rarely in one area. It can be invasive in other parts of the country, but it seems to be less aggressive here. Like Washington hawthorn, single-seeded hawthorn grows as a shrub or small tree, and bears white flowers in late spring. The oval red berries ripen a little earlier (than the Washington hawthorn) in the fall and are single-seeded (hence the name). The toothed leaves are deeper than those of the Washington hawthorn, but the thorns are smaller, about 1/2 inch to an inch long.
Hawthorn is common in the undergrowth of Massachusetts, but these are specimens that do not bear good fruit. It’s very shady in the forest. If you want to find fruits full of fruit, look in sunny places, such as fields with bushes and shrubs, along the edges of pastures and along streams. They are often grown as ornamentals, so if your friend has one and you don’t mind picking berries, you have an easy culinary experience.
This is my first experience using hawthorn berries, and I use them to make an extract, with the same process as you use to make vanilla. I hope to use hawthorn oil as a food additive in cooking and baking. I filled a clean mason jar 3/4 full with fruit, covered it with 80 proof vodka, and sealed the mason jar. I’m not sure how long it will take to pick up enough of the berry flavor, so I’ll check it day by day. I know other extracts (like vanilla extract) take weeks, so that’s what I’m waiting for here.
