These days, though, I’m bringing hawthorn closer to me. For food and medicine, hawthorn has a place in my heart. Literally.

I also made a lovely syrup to serve with smoked duck, which is my “go-to” dish this holiday season. A slow-simmering infusion of hawthorn berries, cranberries, juniper, rosemary and chives, with a clear dose of white balsamic vinegar, complements the rich, smoky flavors of the duck, making it the perfect little-needed dish.

Causes Several fungi of the genus Gymnosporangium cause Hawthorn rust. G. clavariiforme and G. libocedri have been recorded from Oregon; G. from Washington.
