We are very lucky to have so many trees in our forest. They are planted near old homes and community spaces that I believe have been used by people in these mountains for generations for their healing properties.

As with most good things, the process begins with a trip into the forest. Going to Animal Patch in the fall has become a tradition for me and it blesses me in so many ways.
Hawthorn: The Fruit Of Fall
I usually invite a close friend to come. It’s a bit of a hike, so we packed our bags and packs of snacks for the trip. We hike with gratitude in our hearts for the beauty of the forest in the fall. The colors and movement of leaves inspire us. Stories, dreams and inspirations fly from our lips and swirl around us like leaves in a gentle breeze.
There are many varieties of hawthorn and they grow in many different environments around the world. What we like to pick has large red berries.
These ancient evergreen trees grow tall and look like huge nests for wildlife. They make a thick shelter for the mother to bed with her babies. Their legs protect the interior with long sharp spikes that grow every inch or so along the branches. It’s a reminder that we must stop and respectfully ask to enter. Next, we have to find the door. We circle the spines until we find a path where the animals have fallen. It is like entering someone’s house and one should enter with respect.
The legs provide protection not only for the bear but also for deer, elk and other critters that find refuge in its branches.

The Hawthorne treatment is all about soothing the digestion and nourishing the heart. I like to make something herbalists call Oxymel. This is a way of preserving the medicinal properties of berries in vinegar and honey. This is kind of a foolproof method because it doesn’t really require much but a crock pot, some high quality organic apple cider vinegar that has “mother” in it, some good honey and some clean jars. The acidity of the mustard keeps it good for the year. Oxymel is a 1:1 combination with honey that preserves the product even more and makes it a delicious way to make a drink. I like to mix it with sprinkler water. It’s delicious and then I get my dose of apple cider vinegar for the day in addition to the benefits from the beer.
To make this delicious recipe, I wash the fruit with water and put it in the sink. I even add some vinegar to the water which just helps clean them.

I strain the dairy and add it to the crockpot as follows. I put 4 pounds of berries with mom in 4 pounds (8 cups) of organic apple cider vinegar and simmered on low for 12 hours. As soon as they are plump and brown, I mash them and cook them some more. Hawthorn berries have large seeds in them so it is important to mash them and get all the pulp in contact with the pulp.

I then strain them with this old fashioned strainer which allows me to mash them further. If I want a clear vinegar, I’ll strain the solution through cheesecloth, but I don’t mind the fiber in my vinegar.
Then I mix the vinegar with the honey in a blender. You never want to heat honey because it destroys many of its wonderful healing properties when you heat it. Instead, mix one teaspoon of honey and one teaspoon of berry vinegar and mix it in your blender. This will make your Excel. It will be foamy and delicious.
Then just add a spoonful to your favorite spritzer water for a hearty fall drink. I also like to add it with ginger.
