But before you spend the better part of the rest of your week tinkering with your rewards, here are some quick tricks for getting your harvest fast and creating provocative and delicious herbs and remedies perfect for the season.

First, set aside at least half of the blackberries and all the leaves for drying on large flat trays. Before placing on the drying racks, wash them in a strainer with cold water and shake well.

Line the pans with parchment paper before laying out the leaves and berries to dry. If you are using an oven, use it only after you turn it OFF and the oven temperature reaches 90°F or less. You may also want to separate the fruit and leaves and dry the fruit at temperatures of 130°F to 150°F and keep the leaves at lower temperatures. Keeping them in sealed paper bags until you use them to make tea or other recipes will prevent them from sealing in moisture that can cause spoilage or mold.

This will give you long-lasting fruits for later use, as well as the first two ingredients of hawthorn tea. The berries won’t stay fresh, so dry any that aren’t ready to use right away.

Next, wash, sort and sort the remaining fruit. You can make a delicious ketchup with tincture, syrup and strawberries using the recipes on this page. But remember, you need 20 times the water, so unless you have a very large simmering pot, you’ll be working at lower numbers here.
